Ciao amici! Hello Buddies! So this weeks recipe is inspired by the FABULOUS food writer Nigella Lawson and it is definitely EASY to make! I would describe it as a sort of a mix between meatloaf and Pizza...intrigued? Read On!
Ingredients
2 medium sized eggs
500g beef mince
3 tablespoons breadcrumbs
3 tablespoons of dried or fresh parsley
1 teaspoon of Garlic Salt
1 can of chopped tomatoes
2 teaspoons of garlic infused olive oil
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 ball of mozzarella
A bit of Butter (for the greasing of the pan)
(OPTIONAL) 1 small bunch of fresh basil
Methood
- Pre-heat the oven to 220ºC
- Beat the eggs, and then using your hands, then lightly mix them with the beef mince, breadcrumbs, parsley & garlic salt. Like Nigella says, only lightly mix the mixture as you do not want the meat to be too packed and condensed.
- So imagine the beef is like a pizza crust,delicately press the mixture into a round (and greased) dish or pan.
- Drain as much as the runny liquid away from the chopped tomatoes, you do not want any extra liquid to ruin your base! Mix in the olive oil and oregano & basil to make your tomato sauce (maybe even a little extra parsley if you want to!). Lightly spread it over the beef mixture.
- Slice a ball of mozzarella into thin (ish) slices and arrange them on top of the base and sauce.
- Place the dish in the oven for 20-25 minutes.
- After taking the dish out of the oven, let it cool for 5 minutes, place basil leaves on top and then serve!
