JOSH COOKS: Pancake Day Struggles? We got you covered!

Are you struggling to find ways to make Pancakes? Tempted to buy the ready made batter? Well we CANNOT ALLOW THAT! We have an easy recipe (which is potentially low in fat) for you to follow here, courtesy of Fork My Life presenter Joshua Rom.

100g Plain Flour

300ml of Milk (For lower fat use skimmed milk)

2 medium sized eggs

1 tablespoon of Caster sugar (Or low calorie sweetener)

1 lemon

2 teaspoons of vegetable oil

Low fat cooking spray

BUT KEEP ON HAND :

30-50g extra of plain flour

1 EXTRA Lemon

Fruit such as strawberries or blueberries (BUT it depends on taste, Bananas and Raspberries are ALWAYS good options).

Instructions:

-Add flour, milk, eggs and caster sugar/low calorie sweetener (in that order) to a large bowl.

- Whisk the ingredients together to form a smooth and creamy mixture.

- Cut the lemon in half, get rid of any pips and then squeeze one half of the lemon into the mixture (keep the other half on hand for later).

- Add the vegetable oil to the mixture.

- Whisk Again.

- If you feel the mixture has lost it's creamy texture, keep adding the extra flour until the batter is creamy again.

- Rest the mixture for 5 minutes.

- Pour the batter into a jug.

- Spray a frying pan with a few sprays of non fat cooking spray and put on hob until hot.

- Pour a small amount of batter into the pan.

- When you see small bubbles on the batter after a few seconds (They do not take long at all), flip the pancake.

- Flip again once you feel the other side is cooked.

- Place cooked pancake on the plate and leave to rest for 1 minute.

Serving (all is optional) :

- Cut the other lemon half into wedges to serve alongside pancake.

- Wash Strawberries and cut into quarters to serve with pancake.

- Wash blueberries and other fruit.

- Sprinkle Icing sugar/Low calorie sweetener onto pancakes and fruit.
