It’s Pancake Day tomorrow, so it’s about time we started prepping for all the delicious varieties of pancakes we’re going to enjoy.
Pancake Day used to be about clearing your cupboards of any temptations before the fasting period of Lent, however, here at Fork My Life we like to think it’s a great excuse to stock those cupboards with some goodies. After all, there is only ONE Pancake Day a year.

First of all, you’ll need to make sure you have the ingredients for a standard pancake batter, this one makes about 12 pancakes;
100g plain flour
2 large egg
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
How to do it:
Sieve your flour and make a well in the middle before cracking your two eggs into the centre.
Add the milk a little at a time and whisk at the same time until the mixture is runny and smooth.
Add the oil and stir.
Then oil your pan, wait for it to heat, and use a ladle to measure out your pancake batter. (tip: at this point, you can add a handful of chocolate chips to the batter for a cheeky chocolatey twist to your pancake)
Wait for it to brown and go solid, before flipping over and cooking the other side.
Next up, it’s time for the fun part- toppings!
You have complete freedom to make the simpliest, wackiest or most decadent pancake of your choice, but here are some of our ideas, Lemon juice Sugar Nutella Bananas Ice Cream in various flavours Jam Cream Chocolate sauce.
Feel free to tweet @forkmylifeldn photos of your finished masterpieces, we’d love to see what visions you can create in the kitchen! Enjoy your pancakes!
